Banana Bread Oatmeal
I always love a good bowl of oats, but now that I’m a breastfeeding mama oatmeal has become an everyday affair to help pump up my supply. This recipe is my ride or die oats recipe that tastes like banana bread while still being super simple to make. Sometimes if I’m feeling fancy I’ll even throw on some chopped walnuts and freshly sliced bananas for a little extra pizazz.
Banana Bread Oatmeal

Ingredients
- 1/2 cup oats
- 1/2 cup nut or oat milk
- 1/2 cup water
- 1/2 tbsp Lakanto golden sweetener (or maple syrup)
- 1/2 very ripe banana (I usually just throw in half of a frozen banana)
- tiny splash of vanilla extract (optional)
- pinch of salt
Method
- Add all of the ingredients into a small sauce pot and put on the stove on medium heat until mixture starts to bubble.
- Once the mixture is bubbling, turn the heat down to low and continue to cook until the oats are tender, the banana has melted into the oats and the liquid has mostly absorbed, roughly 5-7 minutes.
- Transfer oatmeal to a bowl and top with any desired additions.
Notes
Sometimes I’m craving oats but I also want a breakfast that has a decent amount of protein too. To up the protein factor of this oatmeal recipe I often stir in 1/4 cup of liquid egg whites at the very end. To do this, make sure you pour the liquid egg whites in a slow and steady stream into the pot over medium low heat, while whisking vigorously so that the egg whites don’t scramble in the pot but instead melt into the oats.
